Oats: 3/4 Cup of Oats, 200gms, of Pumpkin Diced, 1/2 an apple diced, 1Tbs of Raisins. Place everything in a pot/pressure cooker and cook until all soft with 2 cups of water. Top with Cinnamon.
Pudding: 100gms Avocado, 1-2 teaspoons Cacao, 200ml Soy milk, 1 banana, blend and place in the freezer for 30 minutes and enjoy.
Lunch: 1 Cup of Cooked Rice, 250gm Firm Tofu, 200gms Mushroom, 200gm Bok Choy, 100gm Mung Bean, 1 clove garlic crushed, 1/2 onion diced, 1 Vegan Stock Cube (Massels Brand is what I use.) Place cube and 1/4 cup of water in a pan, saute' onion and garlic, add mushroom, then bok choy, then mung beans and tofu, add 1-2 teaspoons Tamari, serve with rice, 1 carrot cut into batons, 1cucumber cut in batons and a tomato sliced.
Dinner: 300gms Potatoes peeled and sliced into wedges, place in a hot oven at 250 degrees and cook for 25-25 minutes (until cooked) serve with lettuce, cucumber and tomatoes.
